Since you don't have your birthdate listed in your profile, only folks who already know can extend you birthday wishes.

I couldn't find a way to list it without also listing my location, including my city, which bothered me, A LOT.

Leave those other things blank. LJ only shows what it has data for.
They don't care about you fill out or not.
You can also leave out the year, so it is just the date.
